Even the best restaurants in "The City Different" seem reluctant to change their menus. So it's a thrill to encounter Nelli Maltezos's passionate, of-the-moment cooking at Trattoria Nostrani. (Last March 13, the restaurant was French in name and cuisine; two days later, the name and the menu were Northern Italian.) Her tender gnocchi are flavored with aged Asiago, and she has a light touch with delicate fish and a strong hand with hearty meats. Does foie gras belong on an Italian menu? When it's this good, absolutely.
